I just cannot describe with any accuracy or any degree of verisimilitude, how good this cheese is. A bit harder than the younger manchego cheese, but it IS, by FAR, a better tasting cheese. I buy a pound of this cheese EVERY month, and it only lasts me about a week. I just CANNOT stay away from it as long as I have it. If you have never tried any extra-aged manchego cheese, do yourself one of the best favors that you have ever done for yourself, and get some of this. I guarantee that you won't be disappointed.
