So I only used 2 and threw away the 8 packets in March. Really couldn’t tell the difference in using Platinum instant over regular instant. Will not order again. **Q: Why is the best used by date in a couple of days from when I received it?** A: I can't answer for the seller but I've used expired yeast way beyond the date. As long as it bubbles up in warm 110° water with a little sugar added, you're fine. **Q: Can I use red star instant sourdough yeast in my bread machine?** A: This product makes wonderful bread in our Zojirushi bread machine. **Q: Are instructions included? I am used to 7 grams of yeast for kneaded bread, and only a half-teaspoon for my no-knead, which I prefer.** A: The back of the package says “Use it in any recipe that calls for yeast.
