Review: Perfect for Thickening - This potato flour is great for thickening sauces, cheese fondue, and gravies. It blends well, thickens well and creates smooth sauces. It is also perfect to add in with other gluten free flours to get a perfect blend. My only complaint and not enought to remove a start is that the paper packaging broke open in shipping. Luckily, it was also in a plastic bag. It was a little messy getting it transferred to a better container.. Great value and price.

**Q: is this the same thing as potato starch or is it really flour texture?**
A: Potato flour is made from whole potatoes.  Potato starch is made from only the starch. I use the flour to add to bread flour in dough for a softer, fluffier load. I use the starch for gravy for a shiny gravy similar to using corn starch.

This potato flour is great for thickening sauces, cheese fondue, and gravies. It blends well, thickens well and creates smooth sauces. It is also perfect to add in with other gluten free flours to get a perfect blend. My only complaint and not enought to remove a start is that the paper packaging broke open in shipping. Luckily, it was also in a plastic bag. It was a little messy getting it transferred to a better container.. Great value and price.
