Why is Crazy Korean Cooking Fermentation and Storage Container Better? The CKC Fermentation Container combines the ancient Korean Onggi (earthenware) principle with modern, easy-to-use technology. Onggi dates back to 57 BC and is referred to as the “breathing pot” because of its unique porosity, and it is known as an excellent vessel for fermented foods like kimchi and pickles. Although Onggi is amazing, it's difficult to use in a modern home environment because it is very heavy, difficult to clean and awkward to keep in the fridge. The CKC Fermentation Container was developed to solve those problems while maintaining the ingenuity of Onggi. It is made from high quality polypropylene plastic mixed with natural clay. The inner vacuum lid is easily adjusted according to the level of food. Review: It is a brilliant device for fermenting almost everything. - I bought it after Kenji Lopez-Alt recommended it in his book on the Wok. I've been fermenting using different glass bottles and valves for a while. I never liked the fiddling around to keep bits from coming up and landing with white yeast if I sampled my stuff along the way. My wife hates the smell of Kimchi, so I burp my container outside. I've fermented many vegetables and kimchis in it with superb results. Without hesitation, I will state that I believe it is the best device I have. Fido bottles that I use for fermentation are a great choice. They are easy to clean, can be stored in the fridge and microwave, and have no complicated parts. I can easily put them in the dishwasher without worrying about them hitting the rotor. There’s no need to fiddle with valves or deal with excess water—you can use less liquid, which prevents yeast or mold from forming. What more could a fermenter want? Two years later, I still believe these are the best methods for fermenting most things. Beware fragile

**Q: In the details it states it's bpa & dehp free. is it also bps & pvc free? these 2 chemicals also leach & are toxic.**
A: Even if it is, there are around 77 toxic chemicals present in plastic. Best to avoid it altogether if you’re concerned about leaching.

**Q: Does it stain**
A: I have made 10+ batches of kimchi and the container remains its original brown color--no stains so far!

**Q: Has anyone tried this container for miso?**
A: This container is made for jang (korean fermented sauces) including soy bean paste as well as kimchi so it would be great for miso. Please ensure uncontaminated utensils are used to transfer miso to prevent molds.  Please do not hesitate to contact us if you have any other questions.

I bought it after Kenji Lopez-Alt recommended it in his book on the Wok. I've been fermenting using different glass bottles and valves for a while. I never liked the fiddling around to keep bits from coming up and landing with white yeast if I sampled my stuff along the way. My wife hates the smell of Kimchi, so I burp my container outside. I've fermented many vegetables and kimchis in it with superb results. Without hesitation, I will state that I believe it is the best device I have.
