I love this machine and make pizza dough. Danish pastry dough. focaccia dough, and French bread dough. The rest cycle allows any refrigerated ingredients to come to room temperature before mixing, that way the yeast is better activated. I’ve had the same model since 2012 (from Amazon) and I love it more now than I did when I first got it. **Q: Most of the recipes in the book call for 4 7/16 cups of flour. I have never seen flour measured like this. I usually stick with the Medium since larger slices won't toast in the toaster (They are too tall!). The pan measures 7.5" x 6". I have to say that I have had really great success with this machine. I don't use bread flour just unbleached all purpose flour and my bread is beautiful. **Q: The breadmaker rests for up to an hour after starting. What is this for? Seems like the wet and dry ingredienats sitting for an hour would make paste.** A: Nope doesn't make paste and like others say here it seems to allow ingredients to stabilize temps. Good for me 'cause our water is real cold, and I keep my gluten flour and yeast in the freezer. I think this rest period is key to the excellent quality bread I get from this - as long as I don't forget the yeast. I've had my machine for 7 years.
