It cooks up beautifully firm and al dente. The green color provides a great visual palette, whether alone or paired with red or cream sauces. The pasta has a rich, earthy aroma. The taste is sublime, a hearty semolina with subtle spinach notes and a hint of nutty sweetness.My favorite preparation is boiling with a bit of salt and virgin olive oil in the water, then tossing drained pasta with real butter, salt, pepper, parmesan and sauteed pine nuts. But it's also great with heavy sauces, and has the rough finish to hold them well. De Cecco pasta is made in Italy and is considered one of the best.
