The life expectancy of the Smart Sharp will of course depend upon a few things. For the average home user, you shouldn't really need to sharpen your knives each day, but if you use knives for your job, they may require more sharpening. From my own personal experience, I use my main 3 knives for chopping veg/fruit/meat once or twice a day. I sharpen my knives fully around once a week with an early model of the Smart Sharp, it's now over 4 years old and it shows no sign of losing it's efficiency. How quickly a knife dulls can also depend on the kind of surface you cut food on. To prolong the sharpness of a blade, we recommend cutting food on a wooden or plastic chopping board. Cutting on a hard surface such as a plate or stone work top can cause knives to blunt a lot quicker. Another way of keeping your knives sharper for longer is by using stage 3 before every other use. If sharpener is used correctly the coloured part of the blade will be unaffected. **Q: Would this device be useable on hobby/Xacto knives..?
