Set aside for blending later. Roast 1-2 jalapenos (adjust spiciness), half medium onion cut in wedges, 1-2 cloves of garlic (can be roasted with skin on then peeled) and a green bell pepper. I roast everything together until nicely charred, but check regularly and remove the ingredients that look done. Put all roasted ingredients with tomatillos in a blender, blend on low/medium speed, add some salt to taste and a splash of lime if you wish. Chop and mix in loads of fresh coriander before serving. Can be kept in fridge for a few days (without the coriander).
