While the lids are not tight fitting, enough of a seal exists so that CO2 gas can escape and oxygen from the air stays out. This creates a controlled environment that reduces the risk of the 'wrong' kind of off-tasting bacteria/yeast/mould from growing on the surface of whatever you are pickling or preserving inside the jars. Lids have a low 'overhead' height, making for a good vertical fit in the fridge and they clean up easily after use.
