A few tips - heat a good amount of vegetable oil in the pan, but don’t make it too hot, the crackers burn easily. When you think it’s hot enough out a small cracker in and wait until it puffs up. When it’s hot enough, put a few crackers in but be ready with a slotted spoon or something to remove them fast! They burn very quickly. I don’t tend to put many in at a time.. maybe 3/4. Sometimes I have to push them around the pan to make sure all of it has cooked. Sometimes there are hard bits left if you haven’t got your oil right. When they’re done I put them on a plate topped with a paper towel to soak up the excess oil. As they’re cooling down, the crisp up. Then they’re just like the crackers you get from a Thai takeaway. The flavour is perfect, they are a little bit spicy but I don’t mind that.
