I kept it in the fridge after opening the package, and it lasted a couple of months (I didn't need to use it in large quantities, or every day). During that time, it didn't attract mould as happens with most other cheeses a few days after opening, so that was what enabled me to keep it for a few weeks. It's a very unusual cheese not only in consistency, but also in flavour, so some people may not like it, but I love it's thick, creamy texture and lovely chocolatey flavour.
