Since we installed this we haven't gone back to the grates. We have been cooking salmon, steaks, pork chops, diced potatoes, chopped mixed veggies, brussel sprouts, bacon, burgers, eggs, pulled pork (Sous vide first and finished on the griddle), etc. This has been amazing. It's very easy to clean and maintain. The overall surface size works perfectly for the 2-4 people I'm usually cooking for. I also like that I don't have another large outdoor thing to store if I bought a whole separate griddle. The surface is really thick and sturdy so I don't think there will be any issues with warping.
