It has, in my opinion, way too many instructions lol, it was a little overwhelming at first, but I'm glad it does have so much information included in the little booklet. I kind of measure from the heart a lot and it makes it sound like your bread will go crazy of you don't measure absolutely perfect, but I've done some measuring from the heart and it's all been okay so far. Sometimes a loaf might give the viewing window a warm embrace, but that's okay. I haven't had much bread machine experience but this machine feels well made. I usually use my stand mixer but it took a tumble off of a shelf last year and when I make dough it bucks like crazy, plus it's very heavy, so this machine makes making frequent loaves sooooo much easier. I don't have to drag out the heavy stand mixer and I don't have to babysit dough, win-win. I haven't had any trouble removing the bread from the pan either, it slides right out every time. It kinda sucks that the paddle leaves such a big "belly button" in the bread, but I'll take that trade off. I've seen where some people stop and remove the paddle before the bake cycle but I don't have time for that. If I was giving it as a gift I might bake it in another pan in the oven, but for daily use I can deal with the belly button. I haven't used the mix function yet but I'm looking forward to that. My sister in law uses her bread machine mostly for mixing and loves it. I might try it when I make my garlic knots next time since my poor stand mixer is having a problem. I had an older bread machine for years but gave it to my daughter who then provided me with baked bread. That sparked in me a desire to get myself another machine and I decided on this one. I've only made three loaves so far (got it Friday afternoon and it's Sunday today). At first I made the 2-lb loaves but, they rose so much, they got stuck on the viewing window at the top. While the bread was just fine and delicious, it LOOKED ugly, not to mention having to clean the baked-on dough from the window without breaking or scratching it. The first loaf also didn't mix completely as there were patches of flour/oil stuck to the sides. I didn't know they were "just patches" until I cut the bread so, not a big deal. For yesterday's 2-pounder loaf I scraped down the sides with a silicone scraper. The bread also overflowed the pan so I couldn't even get the handle up to take it out of the machine and I ended up using a folded up dish cloth to reach past the bread top and twist the pan out. I accidentally added just a bit too much yeast, so that's probably why the overflow. Also added some seeds to the dough when the machine beeped since I was in the kitchen and heard it. Otherwise I'd have saved the seeds for another loaf, haha. Also added two good dashes of cinnamon to the pan before first mixing. Haven't tried it yet but it's going with me to work this week and I'm positive it'll be great!! Today I made the 1.5 lb loaf size and it was perfect! So far, the mixing paddle stayed in the pan when I "shook" the bread out to cool and the "cut" at the bottom of the bread is negligible. I made french toast with the first loaf (with homemade raspberry syrup) and it was soooo decadent! We did have the last few slices of that first loaf for breakfast today (toasted, with eggs and bacon) and it was divine! I keep putting the machine away after each loaf...should probably just leave it on the counter if I'm gonna make bread every day! Some reviews I read before buying mention the loaf shape. I don't personally have an issue with it myself. It's likely just a personal preference for folks. The bread tastes the same, lol. I fully intend to make greek yogurt and jam with this machine as well. And sourdough bread!
