If this is Carbon Steel, why is it only rated up to 500 deg?

It has a nonstick coating on it. Depending on the material that is made from, most can only withstand up to 550 degs

Can this pan be used in the air fryer

Looks just like the one I purchased awhile back. Don't know about using in an air fryer but I can tell you that after a short time, the non-stick coating started coming off and pizzas stuck badly to the pan. No doubt coating flakes got on the pizza and we ate that crap before we noticed what was happening. My advice is to search for a high quality name brand. More money but worth it!
