Do I necessarily need to buy the riser?

We have never used a riser for one of these - so I would say no

I'm a caterer. It seems like it works great but isn't that pretty. How do people make them look more presentable?

Disregard Kevin, he sounds like a disgruntled line cook, fresh out of chef school and knows everything. As a long-time caterer I understand that safety and standards like NSF are obvious, but you also need to present well to your clients and their guests, also a valid concern. I have seen people drape these with linens and it worked ok. Sharpest was a lady who custom fit a cardboard box over the top and sides, but away from service area during service. She then contact-papered the box for a very nice look. Health inspector didn't even think twice about it and the unit presented very nicely.

It holds 4 3/4 gallons?

That's about right. It is BIG. It is industrial tough and industrial sized. It is the universally used standard for the hospitality industry ~~ conventions and the like. I bought mine for rough outdoor field use in dispensing hot black cowboy coffee at an annual Burning Man event. It is the only beverage dispenser used in the outdoor bus camping trips of the Green Tortoise Adventure Travel Company.
