Replace 30 percent of the wheat flour with hazelnut flour to add wonderful texture and rich, buttery flavour to your baking, while reducing the total carbohydrates. This makes it ideal for those following a low carbohydrate or paleo diet. Preheat oven to 350°F. Line a baking sheet with parchment paper. Combine flaxseed meal and water in a small and set aside to thicken. In a medium , whisk together hazelnut meal, coconut sugar, baking soda and salt. In a large , mix together almond butter, applesauce, vanilla extract and flax/water mixture. Add dry ingredients to wet and mix well. Stir in chocolate chips. Place approximately 1 1/2 tbsp of dough per cookie on the prepared baking sheet, leaving 1 inch between each cookies. Bake until set, 15-18 minutes. Remove from the oven and cool on the baking sheet for 5 minutes, then move to a rack and cool completely. Makes 20 cookies.
