Can I rekey this to my existing locks?

Yes as long as your existing key is a kwikset key. If you existing key/locks are any other brand beside kwikset you will not be able to rekey it unless you change the entire cylinder out and then at that point just buy a deadbolt from the same lock company you already have.

Could I use the square deadbolt to replace existing hardware on a closet pocket door?

I don't think so. The deadbolt is designed to secure doors that pivot in and out. A pocket door slides open and closed. You will need something similar to a sliding patio door.

Can the key be removed on the inside if the door is locked?

There is a lever to lock and unlock the lock from the inside. They key is only to lock the door from the outside.
