Game Changer for Custard, Lemon Curd, Warm Milk...
Oh, I know, it costs a fortune, it doesn't go in the dishwasher, but it heats up like a champ, and looks divine hanging on the wall. I made my first batch of lemon curd (which I used to make in my mother's stainless/aluminum Lagostina hand me down), and there's no comparison. The copper Windsor pan heated up quickly, but I always felt I was in total control of the temperature, and never worried that it would overheat: as soon as I adjusted the flame, the temperature adjusted. As to the day to day, now I just plain refuse to warm milk in the microwave, it's just as quick to heat up in the pan (I mean it's *crazy fast*, warms up nicely, and you can pull it off before it scorches. In the microwave, you set it to 1 minutes or 2 minutes and you get what you get. Taste-wise, I've discovered slowly warmed milk from a pan is not comparable to microwave heating (full disclosure, I use milk from a local dairy farm. It's pasteurized but not homogenized, so your mileage may vary on the warmed milk. The pan, however, will deliver). PROS: - what they say about the control of copper is true: lemon curd, warm milk, are a treat to make. Heats up fast, extremely responsive to changes in the flame. As long as you're keeping an eye on it, you'll never overheat anything. - Go ahead, splurge for the 2.5mm (250c line). It costs more, but if you're just going with 1.5 mm (150s and 150c series), realize that you're just doing it for the divine look of hanging the pot on the rack. The thinner copper won't give you the speed or the control of the 2.5mm. If your going for copper, own it and go for 250c series. - It really does look divine. I never hung a pot on my wall until I got copper. Now I can't bear to put it in the cabinet. - The ergonomics of the cast iron handle is quite nice - better than most clad cookware, and head and shoulders over the all-clad handle. - Stainless interior means it's fairly hassle free. - Copper doesn't discolor as quickly as I thought. I assumed that as soon as I used the pot, I'd have to polish the copper. Not so. I've used it several times and it has its brand new shine. That being said, once the copper starts to show some patina, and if you want to maintain the copper shine, you can either buy their copperbrill product, or you can just sprinkle some salt on a lemon and run it over the copper. Rinse. Dry. You're done. CONS: - I would love a curved lip on the edge to pour more easily. That being said, it pours pretty well. - It's heavy for its size. A lot of that I think comes from the cast iron handle. On the plus side, it feels extremely sturdy. And it's a small pot, so it may be heavy for its size, but it's definitely manageable. Not sure I'd feel that way about a 5qt sauteuse. - Hand wash. This is not a pan for those who like to use the dishwasher. Hand wash and occasional "polish" (in my case this consists of putting a heap of salt on a quarter-slice of lemon, and running it on the outside. Shines! - Comes without a lid. I splurged and bought a lid separately. Yes, it's a windsor pan, and it's for reducing sauces, but sometimes your sauce has reduced plenty, and you want things to stay warm until you serve. Lids. They're not a luxury anymore. Overall, I love it. No regrets. Though, to be fair, I shopped around for the best price. There's a lot of variability of pricing for Mauviel out there online. Frankly, my preferred option would be to fly to Paris where these items can be bought for half the price. If it weren't for the darned flight and hotel :) Maybe for my next Mauviel purchase.

Will Last Forever
Windsor pans are designed to reduce stock, and copper ones like this conduct heat better and reduce faster. The stainless steel interior is very durable.

Les produits Mauviel constituent le rêve de toute personne qui aime cuisiner, mais sont hélas souvent inabordables, compte tenu de leur très haute qualité. Heureusement, certaines promotions permettent de les acquérir à moindre frais, voire à des tarifs exceptionnels : une occasion très intéressante qu'il ne fallait pas rater. Mauviel produce beautiful Copper pans that make cooking a meal pleasurable as well as easy. They are also amongst the best performers - measured in terms of cooking results, ease of washing up and appearance over time. Copper pans (lined with stainless steel) offer very good levels of heat conduction and are easily controlled. You never need to (or should) use a high heat as everything cooks brilliantly at lower temperatures and, most importantly of all, nothing ever sticks to the surface. The pans are weighty and some of the larger ones can tend to be difficult to lift and pour from once full. This 20cm pan is fairly weighty given its relatively small size but it is manageable, although if dropped I am pretty sure it would damage anything it hit en-route to the floor. In addition, you do need to take care when lifting as the cast Iron handle gets hot fairly quickly; it can be cool in the grip initially but the core temperature can be much higher and require setting down rapidly. You tend to get to know through experience when to use a tea towel around the handle... As it has a cast iron handle, it can go from hob to oven safely. The pan has to be hand washed; it cannot go in the dishwasher, so a little bit more time is necessary to clean up after food preparation. But the interior surfaces are so very easy to clean - as they are lined with stainless steel you can use a scouring pad if necessary without detriment to the surface (don't use one on the Copper though as it'll scratch). Copper surfaces will not retain their sheen without a little bit of care and, even after just one use, a pan will look tarnished - a real kaleidoscope of colours. I always use Mauviel's Copperbrill cleaner and that restores the sheen to the Copper with minimal effort. It is pricey but restores the Copper to like new with only a quick wipe over with a damp sponge (one is included in the pot), using very little Copperbrill in the process.

Perfect for porridge and poached eggs, but unfortunately not at the same time. Really easy temperature control and more rapid evaporation when making sauces. Solid.

Here is the one drawback: this sauteuse weighs 2.5kg empty. You will need strong hands and arms to handle it on the hob. On gas it performs perfectly in all other respects, though: temperature changes happen extremely quickly; heat is distributed very evenly (despite the absence of a thick base) and is distributed well beyond the base; the stainless steel interior is as easy to clean as any other stainless steel pot. It is worth mentioning that the base of the sauteuse has a brushed finish outside which improves heat conductivity on gas further (while it's irrelevant for an electric hob). The design of this sauteuse is simply amazing: it appears traditional without being kitschy, and valuable without being showy. The color combination of the dark grey handle, the copper and the silver interior is simply perfect. My recommendation is to dignify such an outstanding piece of cookware by daily use, just as any other pot. Don't just put it into a glass cabinet, to be removed only for polishing.
