Would this be a suitable upgrade for my sony all-in- one desktop pc which currently has a core i3-2310 cpu @ 2.10 ghz. and is it easy to fit.

NO because your old CPU does not use the LGA1200 pin specification like the i5-10400 It is LGA 1155 so the pins don't match It will not work

How many cores does it have? It says there are 6 but as far as i know there are 10 cores on the 12600k, please someone tell me

No sorry the CPU does not come with a cooler or paste. I recommend Noctua NH-D15S chromaxblack, Premium Dual-Tower CPU Cooler with NF-A15 PWM. a 140mm Fan and quality paste is included. It isn’t cheap or small but it is very quiet and seems to do its job well.
