How many sheets can go in one pocket ??

Only a couple of pages will actually fit in without it bending. The pockets are the exact size of a piece of paper which doesn’t give it any more room it just needs to be quarter of an inch to half an inch wider to be actually useful

How many papers will it fit at a time? Would 40 pages be able to fit easily without ripping?

40 pages would be a snug fit however the pockets would not be in jeopardy of ripping. The challenge I've had with that many papers is the snap not reaching to snap closed. Paper clipper binder clip holds it down effectively though

Will a composition notebook fit inside?

Regular sized printer paper fits so I think a composition notebook would too
