can this be use in salt water fish tank?

For what I know about ABS plastic, yes you can. Will not swell, or dederiate. But research it more, I have never used it in salt water.

Would this work well in an engine compartment? Looking to make an isolated intake. Want to make sure it wont melt

It heats up too easily. Would look for thicker

can this be punched with a paper hole punch or is it too thick and brittle?

It is soft, but probably too thick for a hole punch. A drill works very well.

Is there a way to connect these pannals side by side temperarly and still be able to seperate them if needed?

You could try a removable adhesive or double sided tape maybe.
