Will these fit a MacBook Air 13-inch or will they be too big?

Yes, they barely fit on a 2020 MacBook Air 13" on both sides of the trackpad. Though I actually used mine where they just barely hung off the front edge of the laptop because I wanted to protect my wrists from the hard edge there.

are they able to come off quickly as I need to shut my laptop and transport it frequently?

Yea they move very easily, too easily too me and they also weren’t comfortable at all. I used these for one full 8hr day and my wrist hurt more than when they were laying on the metal surface. I’d try to find an alternative if I were you
