I have an electric oven. It has one heating element that wraps around the top of the oven. Restaurants have a "salamander," an expensive broiler with rows of flames. A restaurant "salamander" will carmelize the top of a dish very quickly. My "broiler" will take so long that the dish will be overcooked, and even then it's 50-50 the dish won't have a wonderful carmelization. (Separate, but related issue is producing "wok hei," which requires a burner producing temperatures up there with blacksmithing.) What to do? A butane (or propane) torch is a good answer. You can buy one of these for soldering at Lowes, if you are into plumbing. But are you? I am not. This is the other, and maybe better, option. It shoots out a blue, high temperature flame for the smoky flavor of wok hei, the carmelizing on creme brulee or simply doing what many home broilers ought to do but don't. Snap the head onto a (buy separately) butane canister and it is ready for instant use. Turn the rear valve to start a hisssing sound, pull the trigger, and carmelize, carmelize, CARMELIZE! I am really pleased with this. And one other thing, unrelated to good cooking: What a great man-boy toy! It produces a hot, dangerous blue jet flame that allows me to be a manly man and show off to you ladies (Just don't mention to me that you have been using this for years. Remember, the most delicate part of a man is his ego!) OK, comedy routine aside. this is a great product. Five stars!

The best torch for creme brulee!! A great hot flame and so easy to light and adjust. We went through 3 or 4 torches before this one. Some were more pretty but this is just the simple best torch we have used. The flame is strength easily did and job such as sugar on goat cheese for a salad. I also like hoe easy it is the remove from butane tank and store.

Finally, a kitchen torch I think will last! It looks great, very easy to use and excellent control of the flame. It is metal and well made.

Great torch. I broke my first one while camping and had to immediately buy another. I wish the flame could go just a touch lower, but it isn't a big deal. I use this to fire creme brulee, sear steaks, anything I need a torch for. Surprisingly doesn't use a ton of fuel, it feels like a professional tool and it looks good in the kitchen.

Made in Japan. Great quality torch. All the reviews where the torch has broken are obviously because of mishandling. There is no way to break off the tab, or break the adjusting valve, or break anything else if you use it correctly. It DOES come with simple English instructions. The description literally says "Butane Fuel Not Included" and anyone who expects it to come with fuel is crazy. Nobody is going to ship a torch with fuel. You can use any 8 oz butane canister. We have several butane stoves that use the 8 oz cans, and we have lots of butane cans, so this torch is really convenient. The torch simply twists on the top. Turn the knob for gas, then click the trigger (no need to hold it). Once lit, you can hold it by the can. Since these butane canisters are designed to operate horizontally, you can tilt the torch to a full 90 degree (horizontal) angle, with the flame pointing straight down. This is convenient for culinary use, as well as other general purpose use. I used it for creme brulee, for starting fires, and for heat shrink tube. I'll probably buy another one so that I have a "clean" one for the kitchen, and one that I can get dirty for the garage.

The design of this is definitely superior to some of the bargain models like it. I have the Fun Owlet version that is pretty good but not as clean firing as this one. The materials on the Fun Owlet one were also just slightly less durable. Although the Fun Owlet version is a great bargain it did not hold up under heat. This Iwatani Pro 2 is built differently. The nozzle gives a consistent flame with no sputter or leakage. The flame is turned on and off with the gas so there is no need for a lock feature on the trigger or anything like that. The base that is fit to the gas canister makes it much safer than some of the bargain models. The safety and fit matter as I have set down the canister on the Fun Owlet model and had it fall over and melt outdoor vinyl.

Received a cheap generic item labeled “Flame Gun” instead of the advertised Iwatani product. On top of that, it arrived used and damaged.

It’s hands-down THE best product on the market of this type. It’s a bit pricy and I was hesitant to spend so much on it but I have no regrets. Having owned the exact same model before, I knew it was great quality and lasted for years and years before it wore out, (my old one still works but the auto-ignition gave out eventually). Excellent and smooth adjustable gas flow. A very solid and safe product.

I really like this torch. It is very easy to use and has lots of adjustment. The clip-on base is very secure. It also burns all the fuel in the butane canister, no leftovers. I also use it in the garage because I can get a lower flame temp and gentler flame pattern than other torches.
