I recently have been diagnosed with type 2 diabetes. I have been looking for different options to eat since Carbs are a No No. I have tried a few different items to replace spaghetti and was glad I found this stuff. Tiny box makes quite a bit. I got 4 servings out of it. It increases in size by a lot. You notice they are really thin uncooked. I cooked mine in the microwave un a spaghetti cooking container. I kept cooking until I was happy with the texture. Flavor and texture isn't icky but it isn't exactly like spaghetti. After your fist bite, it gets better. You can fool yourself into thinking it's "real" spaghetti. ;) I made the whole box just to see how much it would make. Next time I'll just make a single serving. I did put 2 servings in the freezer, I'll edit this once I see how they defrost.

Good product! If you want it "al dente", don't cook it longer than 6 minutes (I'm from Italy).

I like this pasta-take care not to overcook it as it gets mushy. The only disappointment is the box is 1/2 the size of a “normal” spaghetti box (guess I have to pay closer attention to the box size when I order). I like the flavor -and that it is not mushy like many other chickpea pastas.

I’ve been diagnosed with PCOS and have been trying to make changes in my diet to get eliminate as much gluten in my diet and this pasta has been a great alternative to regular pasta. The taste is obviously a bit different, but it really grew on me and I like it a lot.

I love pasta but can’t eat anything made with grain. I tried cassava flour pastas and the penne and fusilli were fine, but the spaghetti noodles would fall apart when I mixed the sauce in. These noodles hold their shape well and have a nice texture. While you’ll never get anywhere near the same texture and taste from grain free pasta as you would with pasta made with flour, this was definitely one of the better ones I’ve tried. I highly recommend this one and hope more will be available soon.
