What filings are I the sandwiches

There are no sandwiches supplied. These trays are for the purchaser to provide food for catering. That said I found them excellent.

How many quarter sandwiches fit in this tray pls?

Depends on the size of loaf and filling, but, I reckon on 24 quarters per tray. So, allowing for two rounds per person one tray will 'feed' 3 people.

Which size tray holds 15 quarters pls?

The small one, holds more than that very good value and reusable.
