What is the max amount of time you can set it for processing?

I haven’t had to do max yet so not sure but it’s digital so you type in the hours and minutes. Love mine!

Can half pints be double stacked in this unit and still be covered with enough water?

It came without a jar holder so I would think that they could not be double stacked unless you have a way to keep from leaning in the canner.

Difference between the auto canner and the Ball one with just the dial knob?

The Ball Watergate canner is easy. The dial let's you start heating water early or to heat jars before filling them. Then just turn dial all the way up to boil. Then you just boil the specified time for your type of food that's recommended. Easy cleaning.

can this be used as a steam canner?
