Its name comes from the Campania de India's established in Cadiz in 1646 by Juan de Want and Margarita de Lila, which was one of the first companies dedicated to maritime trade with America and the East The centuries-old distillery uses a series of small 1820's copper pot stills, each of which has its own personality that adds its own unique character to the gin, operated by master distillers who have been using the same alembics for several generations In its making, a complex five distillation process, 10 botanicals are used: juniper berries, coriander, angelica, angelica root, cinnamon, orange, lemon and lime peel, mint and orange blossom. The result is a complex and well-balanced London Dry Gin that combines traditional botanicals with the best of Andalusia's Mediterranean fragrances and flavours Each botanical is macerated individually in 16 litre glass demijohns for 6-8 weeks to impart the maximum a of flavour, before the gentle distillation process begins The distillation is performed without direct contact with the heat source, using instead a water bath system (Bain Marie) in order to obtain a slower and more delicate distillation that extracts the essence of the different botanicals without altering them. Afterwards, the different essences are left to rest for several weeks before being blended and combined with purified water Want & Lila is bottled in a traditional bottle and stopper, based on the old cy bottles of the time
