USES: Dried porcinis should be soaked before use, and the water used to soak them kept for use as a hearty stock in the dish for which the mushrooms themselves are destined. Porcinis can be used in almost any dish that would normally require a more ordinary variety of mushrooms – think sauces, soups, stews, gravies and the like – but they really come into their own as the star ingredient upon which certain dishes are based, many of which are Italian or French.
