Fantastic flour for bread
I bake sourdough bread primarily and rye bread. When making a "light" rye I like to use a mix of bread flour and rye. I have used King Arthur brand for years and it is a good product. But I found this and wanted to give it a try. I liked it so much I bought a second bag! (I bake bread weekly.) With the $10 off coupon that was great on this second bag I got. The flour itself produces a good quality, great tasting loaf of bread. The flour is fresh and the bags I received have a substantial shelf life into 2022. Stored properly it will keep well. You can bag it up and store in the freezer or if you have a cool, dark storage area, that works well too. The first bag I got the bag was within another huge plastic bag which was great. The second bag was not packaged that way, but no rips, tears or punctures in the bag. It's very thick paper, multiple layers, very sturdy. I highly recommend this product.

Very Satisfied
This product came as expected. I have been trying all sort of flours for home made bread. I also have been using this flour for other baking needs such as cookies. This flour make soft pillowy smooth cookies and bread. I am going to try for Artisan Crust next time. Clean taste and pic was with quick acting yeast. No starter so tasted clean. I will buy again.

The Best Flour
Like many others, I started making sourdough bread during the Covid-19 pandemic. I have used a lot of flours in the past five years - flour from the major conglomerate manufacturers, flour from smaller worker owned mills and even flour from artisian mills. This is the BEST flour I have ever used! The dough it forms is a dream to work with.

specialty flour (type 80) at pandemic prices
if you are looking at this listing during the pandemic because you can't find flour at the grocery store, know that this is not all purpose flour, bread flour, or whole wheat flour. if you are reading this review after the pandemic, YAY! we made it! this is high gluten, high extraction, halfway between white flour and whole wheat flour (like type 85). throw it in a bread machine and it makes pretty good bread. but if your recipe calls for AP, bread or wheat flour, this flour is not a direct substitute. i've made bread in my bread maker with all four types of flour, and they come out quite different. just beware that this is a huge bag of a flour you've probably never tried before. not bad, but very special purpose. also whole wheat flour should be frozen prior to use, so you got 25 pounds to go. the flour comes in a paper bag, with a plastic bag around it. unfortunately, mine came ripped through both bags, but this is a shipping issue. lastly, this is pandemic pricing. the company sells their 25 pound bags for $20 on their website, but $60 on amzn. additional info: one pound of flour makes roughly one 1.5 pound loaf of bread. so you can get 25 loafs from this (depending on recipes), and flour lasts 12 months from milling. also i included a pix of bread made with (top to bottom) bread flour, this flour, and AP flour.

Now, THIS is flour!
When I opened the bag, my first impression was the fragrance. Then the color. Both are uniquely rich and very different from traditional 'store bought' flours. I made two sourdough loaves. This flour developed gluten from the second stretch and fold; the store bought flours take longer to develop their gluten matrix. Oven spring almost push the lid off the Dutch oven- seriously. I've used KA, GM, my own combinations of wheat, spelt and store bought 'bread' whites and nothing can compare to this flour. If you read this and don't try a bag, you're definitely missing an experience. At $2/# it a bit 'pricey' by comparison and if buying it in 50# or 100# quantities reduced the price, it would be my go to flour. I may try cutting it with KA at a 50/50 ratio. If you make sourdough, you know that every loaf is an experiment, for sure. But in no uncertain terms, this flour is different and in a very positive way. Not sure 'Wow' is an appropriate description for flour, but for this one...WOW!

A good baking flour
I'm really enjoying this flour. I had to google what Type 80 is, and after finding out it's lighter than whole wheat, I went for it. There are literally no other options for organic flour where I live, so I figured it was worth a try. So far I'm very pleased with the results. I've made numerous cakes which were delicious. The trick is to remove 2T flour per cup in the recipe and to sift twice. It also works well with my corn bread recipe which calls for mostly regular, all purpose flour. As others have said, be sure to freeze it for a few days before using. I moved it into ~5lb portions and double bagged it in zip locks to freeze. I'm very happy with this purchase and will be buying more from this company in the future.
