Do the arms swing our independently of each other? I am interested in purchasing two sets and would like to arrange them diagonally.

No, not at all. It's a welded metal frame that the ceramic dishes sit in. It doesn't fold for storage, either.

We just recieved the order and the trays are not even close to the demensions on the web page? They are 12 x 6

Thank you for your input. Unfortunately, the overall dimensions of the depth of the serveware is 16.75" that is the amount of counter or table space that it will take up. The dimensions are the height, width and depth of the product this is an Amazon requirement. We will based on your question add the dimensions of the trays on the detail page as well. We are sorry if the overall size was not what you expected.

I recently bought the 3-tier stand and plates when I got home with the box there were no plates. Is there a way I can purchase the plates alone?

You may want to contact company you purchase the three tier stand and plate set from. Let them know that the place was missing with your your order. The Gibson Elite three tier set comes with 3 plates and the metal stand.
