How many leaves come in the package? Are they appropriate for stuffing with food and wrapping?

Yes they are used for lotus sticky rice used in dim sum. As for count, I don't know but it's 1 lb of many lotus leafs.

Do dried lotus leaves have an expiration date? I'm not sure I will be able to use them up fast enough.

It has been restocked every month. It’s very dried leaf used for sticky rice. There is no expiration date because it is not used for consumption other than wrapping sticky rice with steam. It can be used up to one year otherwise the leaves will be too dried and will break easily if later than one year. Just store properly.
