Can you put spices or olive oil in them to use for food?

Sure. I’d wash them first. But I don’t see why not. They are glass. I love mine!! Super company!!

How well would theae work for holding ink for my fountain pens ?

If it any alchohol in the ink it may not keep them long. Maybe put a bit of rubbing alchohol in,mark the level and put the stopper in. Then check in a few days.

Yes they open. Have a glass stopper that's extends into bottle. So far they seem fairly well made. Have knocked them over several times and so far they have not broken.

How many ounces of liquid can each bottle hold?

The bigger ones maybe an ounce. I had 2 break in shipping and split the 3oz bottle into the remaining 4 bottles.
