I used this Maizena corn starch in American buttercream to help with stability, especially because I am from the Caribbean where heat and humidity can make buttercream soften quickly. It worked well for my purpose. I used a small amount in the buttercream, and it helped the icing feel a little more stable without changing the overall texture too much. It mixed in smoothly and did not leave a noticeable taste, which is important! For floral cupcakes, stability matters because the buttercream needs to hold petal detail and shape. This was a helpful addition when making buttercream for decorating in a warm climate. Overall, this is a useful pantry staple for detailed buttercream work. I would buy it again, especially for buttercream work where a little extra structure is needed.
