It is fairly forgiving in the pan, and the spiral shape does a good job of holding onto sauces, especially thicker tomato based or cream based dishes. If overcooked, it does soften quite quickly, so it benefits from being checked a minute or so early rather than left unattended.Flavour wise, it is neutral with a mild wheat taste, which is what you would expect from basic durum wheat pasta. It does not add anything distinctive on its own, but that is not really its purpose. It is designed to act as a base for sauces rather than contribute flavour itself.I have mainly used it in simple weeknight meals like pasta with tomato sauce, tuna, and vegetable mixes.
